Orange ceviche – The fancier version

Servings: Appetizer, 4-6 people
Ingredients
300g of white fish, diced
3 tbsp olive oil
Juice and zest of an orange
Juice of 2 ½ lemons
2 bay leaves
1 french shallots
1 garlic clove
1 handful of fresh cilantro
1 handful of chive
Few slices of oranges
1 bag of corn chips, plantain chips or even endives if you want to go healthy!
How to
cook
Mix the fish, the olive oil, the zest and juice of the orange, the lemon juice, the bay leaves, the shallot and the garlic in a bowl.
Marinate for about an hour, in the fridge.
Take the bay leaves out.
Add the coriander and the chives and garnish with orange slices.
Serve with chips or endives leaves.
